Attempts at Cooking

Typically I like to post about how amazing my meal was and how I am on the path to domestic goddessness.  This meal was not one of them.  It was fine, edible, and my parents/roommates thought it tasted great.  I think they were just thankful to have a hot meal cooked for them.  I am just thankful that they pay the grocery bill.  Normally I rave about how much I love my Not Your Mother's Slow Cooker Cookbook, but sadly the Chicken Sour Cream Enchilada Casserole was not amazing.  I felt that it lacked flavor ( the trouble with cooking for the roommates is that they have a bland sense of taste) and was dry.  Now looking at the recipe again I see that I put in significantly less enchilada sauce than I was suppose to.  Which would have solved both issues. Maybe some day I'll try again, but I have 49 new recipes I need to still try before the end of the year to keep my new years resolution.

There is no photo of the final product because casseroles do not  photograph well!

Another semi-successful meal I made was a Zucchini Casserole.  It was fine, but like the Chicken Sour Cream Enchilada "Casserole" from the College Vegetarian Cooking  it seemed to lack much flavor other than the cheese.   The past 2 weeks were not my best meals, so I'm hoping this weeks meal might make it into a more regular rotation.

    1. Thanks! I made chicken marsala last night which was a success, but I did have help in the kitchen as well :)
